The Orzo One Pot!!

Being a working mum, during week I try and go for quick easy meals that are still tasty. One of my go to meals is one my Husband has named The Orzo! Orzo is nothing fancy as the name might suggest its simply a type of pasta, that you could easily mistake for rice. You will find it in most supermarkets at under a £1 so you can’t go wrong, give it a try..Here goes the recipe.


The Ingredients

1tblsp Oil

500g minced beef

1/2 an onion, chopped

2 cloves garlic, minced

1 can chopped tomatoes

1 Courgette diced

1 pepper chopped

3 cups washed Spinach

1 cup chicken stock ( I use chicken for everything)

250g Orzo

1/2 tsp Thyme

2 tsp Paprika

1tsp All Purpose seasoning

Salt and pepper to taste

1/2 cup grated Parmesan /Cheddar Cheese (optional)


Method


1. Start by adding paprika, salt and pepper to your minced beef and mix well. 2. Heat a large pan with oil over medium-high heat. 3. Add the garlic to the pan and cook for 30 seconds, until fragrant.

4. Add mince, onions and fry until the beef is browned and the onions have softened. Add chopped peppers and courgette to the pan and cook 5. Add the Orzo, thyme, chopped tomatoes stock, and seasoning. 6. Stir everything together, bring to a boil then reduce to a simmer and cook covered for 10-15 minutes, stirring occasionally until the orzo is fully cooked.

7. Stir in the spinach until wilted 8. Add ½ the grated cheese and stir 9. Sprinkle with the remaining cheese and serve.
