Spring Comfort Stew

The weather in the UK has been so bad however last week we had sunshine and it was brilliant, I even went out shopping for summer clothes. You can imagine my disappointment today when I woke up to doom and gloomy cold weather. If you are anything like me thought of a nice heartwarming stew would have come to mind . What to cook was the question,  well a few weeks ago l picked up some stewing pork from the butchers so that was my starting point. The rest was empty plates from my family a sign to me that the food was loved and yummy. Recipe below


Ingredients


500g – 700g stewing pork

1 medium onion diced

2 cloves of garlic sliced

1 cup apple juice ( I used a Tango Apple)

2-3 tblsp Dijon Mustart

1/2 cup double cream

1 cup chicken stock

1 cup diced carrots

1/2 cup green peas

Salt and Pepper


Method


  1. Add some oil to a saucepan and add seasoned pork pieces, fry until browned.

  2. Remove pork from pan and set aside.

  3. Add onion and fry until translucent then add garlic and fry for a further minute

  4. Pour your apple juice and stir then add your mustard and stir somemore

  5. Add the pork you set aside together with the juices from the meat.

  6. Leave to simmer on a medium to high heat for about 20-30 minutes.

  7. Add the double cream, chicken stock and cook on a low heat for a further 30 minutes add the carrots half way through.

  8. Remove lid, add peas and cook uncovered for a further 10 minutes.

  9. Serve with rice / mashed potatoes

  10. Garnish with sliced apple
