INGREDIENTS
1 tblsp olive oil
2 onions, diced
1 tsp cumin
1 tsp all purpose spice
2 garlic cloves, minced
1 stick cinnamon
2 large sweet potatoes, cubed
3 carrots, sliced
1 cup dried lentils
5 cups vegetable stock,
1 handful Spinach
Instructions
Heat oil over medium-high heat in a heavy pot such as cast iron .
Add the onion, reduce heat to medium and cook 3 to 5 minutes or until onion begins to soften.
Add the garlic, cumin and give it a quick stir, then add the sweet potatoes, carrots, lentil,cinammon stick and stock.
Bring to a boil, cover slightly and simmer until sweet potatoes and lentils are tender about 20 minutes.
Add the spinach and heat through till wilted.
Season to taste with salt and black pepper.
